How to make aam ka achar?
To make aam ka achar (mango pickle), you will need the following ingredients:
Raw mangoes (1 kg)
Mustard oil (1 cup)
Fenugreek seeds (1 tsp)
Mustard seeds (1 tsp)
Turmeric powder (1 tsp)
Red chili powder (2 tsp)
Salt (to taste)
Asafoetida (a pinch)
Instructions:
Peel and cut the raw mangoes into small cubes.
In a pan, heat the mustard oil and add the fenugreek seeds and mustard seeds. Once they start to crackle, add turmeric powder, red chili powder, and asafoetida.
Add the mango cubes to the pan and stir well to coat the mangoes with the spices.
Cook the mangoes on medium heat until they are soft and the oil starts to separate from the mixture.
Add salt to taste and stir well.
Allow the mixture to cool and then transfer it to a clean and dry glass jar.
Keep the jar in the sun for a few days to allow the pickle to ferment.
Once the pickle has fermented, it is ready to be eaten. It can be stored in a cool and dry place for several months.
