Pasta Pesto with Kale, Hemp & Flaxseed Oil

Ingredients:

  • 3 Garlic Cloves
  • 3 Cups Kale
  • 3/4 Cup Hemp Seeds or Roasted Walnuts
  • 1/4 Cup Adya Organics Flaxseed Oil
  • 2 Tablespoons Lemon Juice
  • 3/4 Teaspoon Sea Salt
  • 1/4 Teaspoon Ground Pepper
  • 1/3 Cup Parmesan Cheese (Grated)
  • 1 lb whole grain pasta
  • 1 cup reserved pasta water


Directions:

  • Step 1: Start by grinding the peeled garlic cloves in a food processor until it is minced. Once garlic is chopped, add kale, hemp seeds, lemon juice, salt and pepper to the processor.
  • Step 2: Adjust the consistency by adding more oil or reserve pasta water. You can also add more lemon juice or salt/pepper as per your liking.
  • Step 3: Once pesto is ready, store it in an airtight jar or cook pasta al dente according to the instructions on the packet.
  • Step 4: Leave the pasta to cool and add flax oil pesto to the cold pasta slowly. Savor immediately.
