- Once the curd gets ready, it is churned clockwise and anti-clockwise with a wooden churner, known as bilona.
- This process slowly yields butter, which is extracted from the curd.
- This butter is then placed on low heat on a wooden fire. Gradually, the water from the butter evaporates leaving behind ghee.

Regular ghee is produced on a mass-scale at industrial levels. At times, the cows are injected with hormones to produce more milk.
A2 Gir cow ghee is produced in small batches on cow farms. Here, the cows are not given any hormones to increase their milk production. Instead, they are fed with organic fodder to keep them healthy.
