1. Sourcing A2 Milk from Indigenous Cows
Poshtik or nutritious ghee comes from the milk used in its extraction. Indian cow breeds like Gir and Sahiwal are known to naturally produce A2 beta-casein protein, which is scientifically proven to be easier to digest and less likely to cause inflammation as compared to the A1 protein found in many hybrid breeds. To ensure that the milk retains its pure, sattvik qualities, the cows must be fed with natural grass diets that are free from hormones and antibiotics.
2. Boiling and Cooling the Milk
After the process of milking, the A2 milk is boiled on slow fire. This is done in order to get rid of any harmful bacteria. Industrial manufacturers often tend to rapidly heat and instantly cool the milk using machines of mass production. This causes the loss of essential natural nutrients. Our Vedic method teaches us to boil the milk at low flame and allow it to cool naturally without any refrigeration in order to maintain the milk’s enzymatic activity and energetic balance.
3. Culturing the Milk into Probiotic Curd
Once cooled, a small quantity of curd that’s leftover from the previous batch made is added into the milk. This helps to kickstart the process of fermentation naturally. By morning, the milk transforms into probiotic-rich curd. This curd is packed with beneficial bacteria that aids digestion and enhances our gut health.
4. Bilona or Handchurning
The curd is then churned by hand with the help of a traditional wooden churner called a mathni. The churner is moved slowly, clockwise and anticlockwise, creating a rhythmic, meditative process that gently separates the butter from the buttermilk. This slow, manual churning ensures the preservation of delicate enzymes and nutrients present in the curd.
5. Slow Heating and Filtering
Once the butter is collected, it is simmered slowly over a low flame, traditionally on a wood or cow-dung fire, in clay or copper vessels. This heating process separates the pure ghee from milk solids and water without eliminating the heat-sensitive vitamins such as A, D, E and K. The simmering also enhances the concentration of butyric acid which is an important fatty acid featuring anti-inflammatory effects.
The golden liquid ghee is then filtered carefully through a clean cotton cloth to remove any remaining solids. It is then stored in glass or earthen containers for everyday use.
